Aloo Gobi

Aloo Gobi is an easy to prepare healthy vegetable curry which all can enjoy. Ingredients 2 Potatoes cut into bite size chunks Half a Cauliflower Half an onion finely chopped Half an onion cut into large chunks Green pepper finely chopped 2 Tablespoons of Tomato Puree 2 inches grated ginger 4 cloves of garlic sliced 2 teaspoons of curry powder 1 teaspoon of cumin 1 teaspoon of Chilli powder 1 teaspoon of Turmeric 1 tablespoon of Worcestershire sauce 1 tomato quartered Coriander for garnish 1 can of coconut milk or 1  can of chopped tomatoes ( your preference) Method 1) Boil the Potatoes and Cauliflower in water with salt and the turmeric 2) Meanwhile, fry the chopped onion until translucent 3) Add the Curry powder, Cumin powder, Garlic and Ginger and fry for 2 minutes 4)Add the pepper,  Tomatoes, Tomatoes puree, chunks of Onions and Worcestershire sauce and stir-fry for a further 2 minutes 5) Add the  can of coconut milk and tomatoes and  he...

3 Cup Chicken

3 Cup Chicken is one of Taiwan's national dishes. It is surprisingly easy to prepare and delivers lots of flavours. Ingredients 1 tbsp of a nut oil such as ground nut or peanut 5 cloves of garlic, finely chopped 2.5 cm of ginger thinly sliced 1 lb of Chicken thighs cut into bite size pieces 60 ml of  Shaohsing rice wine 60 ml of soy sauce 60 ml of toasted sesame oil 1 tbsp of Brown sugar A handful of Thai basil leaves plus extra for Garnish 1 medium red chilli for garnish Method 1) Fry the ginger and garlic for a minute or so over a high heat then add the chicken for 3 minutes 2) Once the chicken has browned add the rice wine, soy sauce and toasted sesame oil,  cook on a medium heat for 6 minutes. 3)  Stir will and add the sugar 4)Bring to a boil then turn to a medium heat for about 5 minutes until you a sticky consistency and the chicken is cook, 5) Bring off heat and add the basil so it just wilts 6) Add the extra basil and chillies for garnish and...

Panettone Bread and Butter Pudding

During Christmas, my family gets a lot of Panettone ( sweet bread from Italy)  a good way of using it up before it goes stale is to make a Panettone Bread and Butter pudding. Ingredients 50g of Butter 5 slices of Panettone or as many as you like apricot jam for spreading 250 ml of milk 2 eggs 1 egg yolk 50g of brown sugar Method 1) Butter an oven proof dish, spread the panettone slices with and apricot jam and place in the buttered dish in overlapping layers 2) Pour the milk and cream into a saucepan and bring gently to the boil 3) Whisk the eggs, yolk and sugar until creamy and fluffy and whisk into the warm cream and milk mixture. 4) Pour over the panettone so the mixture covers the bread, then sprinkle some extra sugar to create a crunchy crust. 5) Place a roasting tin in an oven dish half filling with boiling water. Then place the oven proof dish in the roasting dish. Bake at 180 oC for 25 minutes.

Fairy Cakes

These were the first cakes I ever baked as a small child, and they are so nice and simple I tend to keep going back. I hope you enjoy. Ingredients  Makes 12 cakes 120g of Caster Sugar 120 grams of butter 2 Eggs 60 grams of Sultanas 120 grams of self raising flour Method 1) Cream the butter and sugar 2)  Add the eggs and mix 3) Mix the flour and sultanas thoroughly 4) Get a cake tin and 12 cake holders and put 2 teaspoons of the cake mixture in each cake holder 5) Bake at 180 oC for 30 minutes Over the years I have experimented with Orange and Lemon Zest , but its entirely up to you to make up your own flavours

Fish in a Cheese and Wine sauce

This is a very easy dish do and I find the wine and cheese gives the fish  a luxurious Flavour Ingredients 4 Fish fillets such as sole 75 grams of Butter 25g of grated Parmesan cheese 50 g of Fish stock 3 Tablespoons of dry white wine or Marsala wine salt and pepper extra cheese to serve Method 1) Place some flour in a shallow bowl mix with salt and pepper  place each fish fillet and shake of excess. 2)Heat the butter and add each Fish fillet and cook for 3 minutes each side 3) Sprinkle the Parmesan on the fish and cook for 2 minutes until it melts 4) Add the fish stock and wine and cover the pan for 4 minutes until the fish is cooked and the sauce has reduced.

Belgium part 2 , Places to Visit

Belgium has a plethora of places to visit. Although I was there only a short while I managed to fit in a trip to a chocolate museum and numerous visits to cafes to eat the famous Belgian Waffle. The following Pictures depict a trip I made to Belgium. It was the first time I took the Eurostar from London. The trip overall was fun, but it has made me want to explore other Belgium and Dutch cities in the future such as  Bruges, Ghent, Maastricht, The Hague, Eindhoven.
