Fairy Cakes

These were the first cakes I ever baked as a small child, and they are so nice and simple I tend to keep going back.

I hope you enjoy.

Ingredients

 Makes 12 cakes

120g of Caster Sugar
120 grams of butter
2 Eggs
60 grams of Sultanas
120 grams of self raising flour

Method

1) Cream the butter and sugar
2)  Add the eggs and mix
3) Mix the flour and sultanas thoroughly
4) Get a cake tin and 12 cake holders and put 2 teaspoons of the cake mixture in each cake holder
5) Bake at 180 oC for 30 minutes

Over the years I have experimented with Orange and Lemon Zest , but its entirely up to you to make up your own flavours
