Aloo Gobi
Aloo Gobi is an easy to prepare healthy vegetable curry which all can enjoy.
Ingredients
2 Potatoes cut into bite size chunks
Half a Cauliflower
Half an onion finely chopped
Half an onion cut into large chunks
Green pepper finely chopped
2 Tablespoons of Tomato Puree
2 inches grated ginger
4 cloves of garlic sliced
2 teaspoons of curry powder
1 teaspoon of cumin
1 teaspoon of Chilli powder
1 teaspoon of Turmeric
1 tablespoon of Worcestershire sauce
1 tomato quartered
Coriander for garnish
1 can of coconut milk or 1 can of chopped tomatoes ( your preference)
Method
1) Boil the Potatoes and Cauliflower in water with salt and the turmeric
2) Meanwhile, fry the chopped onion until translucent
3) Add the Curry powder, Cumin powder, Garlic and Ginger and fry for 2 minutes
4)Add the pepper, Tomatoes, Tomatoes puree, chunks of Onions and Worcestershire sauce and stir-fry for a further 2 minutes
5) Add the can of coconut milk and tomatoes and heat through
6) Add the Potatoes and Cauliflower
7) Garnish with Coriander and enjoy
