Exotic Fruit Batter Pudding

This is a very easy Dessert  and you can use  any fruit but to make the dish as if its from the tropical island of Guadeloupe I would suggest using Pineapple and Mango. Ingredients 1lb of Pineapple and Mango cut in to small chunks 2 Tablespoons of Dark Rum 3 Eggs 20g of Plain Flour Pinch of Salt 50g of Caster Sugar 300ml Of Milk 1 Vanilla Pod Butter for greasing Sugar for sprinkling Method 1) Cut the Fruit into Cunks and sprinkle with rum and set aside 2) Break the eggs and sifr the flour and sugar add the sugar and beat the mixture until smooth 3) Heat the Milk with the Vanilla poduntil warm and pour into the egg mixture 4) Arrange the Fruit in a greased oven proof dish add the milk mixture and bake in the oven for 40 minutes @ 200oC ,when cooled add some sugar on the top.

Carne Con Chilli

I hope you all had a great Christmas, here is a great comforting stew to try. Ingredients 3 Guajillo Chillies 4 Large Ripe  Tomatoes 4 cloves of garlic 1 lb of  cubed beef 1 Large onion roughly chopped 1 Tbsp of Ground cumin 1 tsp of dried mexican Oregano 1/4 tsp of  ground allspice 1 Bayleaf Some salt 2 Tbsp of Chiplotes en adobo Sour cream Cheese Coriander Method 1) Dry fry Chillis for a bout 2 minutes then set aside in a bowl with 450 ml of boiling water for 20 minutes 2) Dry fry your tomatoes  and Garlic and set aside 3) When cool blend the chillis with some of the Chilli water the Chiplote en adobo,garlic  and tomatoes 4) Brown the beef then set aside 5) Fry the onions for 4 minutes then add the spices 6) Then add the beef ,the chilli tomato paste and all the chilli water and cook in the oven for 2 hrs @ 180 oC 7) Serve with Sour Cream , Cheese and Coriander

Tasty and Easy Jerk Chicken

Please try this easy recipe for great Jerk results Ingredients Chicken thighs for 4 people 2 Teaspoons of all spice 1 Teaspoon of ground cinnamon 1 Teaspoon of sea salt 1 Teaspoon of  black pepper 1/2 teaspoon of ground nutmeg 4 Tablespoons of Brown soft sugar 4 Garlic Cloves 1 Spring Onion 1 Thumb size chunk of Ginger 100ml of Oil 2 tablespoons of Lime 4 Tablespoons of Soy Sauce 2 tablesppons of Vinegar Method 1) Blend all the ingredients to form a paste 2) Marinade the chicken over night 3) Cook the chicken at 180 oC for 40 minutes in the marinade and turnover after 20 minutes for great results

Easy Fish Tortilla

This is a seriously Easy Lunch Idea Ingredients per Tortilla 1 Fish finger or any breaded Fish 1 Tomato Quartered Some lettuce Some sour cream or Natural Yoghurt Some Coriander or any herbs Of course, you can add any salad you have left over. Method 1) Simple cook, you fish and lay it on the natural yoghurt and assemble your salad and herbs.

Chicken Calypso

This is one of my favourite Caribbean Dishes from the sunny Island of Dominica Ingredients Enough Chicken for 4 Hungry people 1 lb of Long grain rice 1 Onion finely chopped 1 Green pepper , finely chopped 1/2 tea spoon of saffron strands 600 ml of chicken stock 2 inch piece of Lime peel 1 Tablespoon of Rum Salt and pepper 125g of Mushrooms Chopped Method 1)  Brown the Chicken , set aside 2) Add the rice , Onion , Peppers to the pan and stir well. Fry until the rice is translucent. 3) Stir in saffron strands, chicken stock , lime peel , and Rum 4)Bring back the chicken and season well 5) Fry the mushrooms in another pan for 5 minutes then add to the main pot and cover and simmer for  30 minutes 6) Serve when the liquid is absorbed , and the rice is fluffy , remove the lid for the last 5 minutes of cooking

Chilli

My Easy Chilli recipes makes a great midweek meal , if you want it hotter then please add more chilli powder. Ingredients 1 Large Onion  Chopped 3 cloves of Fresh Garlic Chopped 1lb of Mince Beef 1 Tin of Chopped Tomatoes 1 Glass of Red Wine 1 Tin of Red Kidney Beans 2 tsp of Worcestershire sauce 1 Oxo beef cute 30g of Dark Choc 2 Tbsps of Basil to Garnish Spices 3 tsp of Cumin 2 tsp of dried oregano 2 tsp of ground coriander 1tsp of Paprika 1 tsp of Chilli Powder 1 tsp of Mild curry powder 2 Bay leafs Method 1) Fry the Onion and garlic until the Onion is translucent 2) Then add the beef and brown 3) As browned add the oxo beef cube 4) Add the spices and cook 5) Add the wine and bring to a boil 6) Then simmer away and add the  Tomatoes , Worcestershire sauce and Kidney Beans 7) Let simmer away for 20 minutes or so 8)  Take off heat add the chocolate and stir in so it melts and garnish with Basil This version of Chilli used Brais...

Jamaican Curried Chicken Stew

This is a lovely mild chicken stew with curry undertones, please give it a try. Ingredients Chicken Thighs for 4 people Creole Seasoning 1 Onion diced 2 teaspoons of minced Garlic 1 1/2 of Tablespoons  of Jamaican  Curry Powder 1 teaspoon of Tomato Paste 1/2 teaspoon of smoked paprika 4 potatoes 200g of green beans salt 1 can of coconut milk 500ml of Chicken stock 1 Bay Leaf 2 Large carrots chopped 2 Tablespoons of Parsley Method 1) Season the chicken with the creole seasoning 2) Brown the chicken on both sides in a large frying pan and set aside 3)Then add the onions, garlic, paprika, curry powder and stir for 5 minutes 4)Then add the coconut milk, stock and bay leaf 5) After 2 minutes add the chicken back along with stock  and potatoes and cook for 15 minutes 6)  Then add the green beans and carrots and cook for a further  7 minutes 7) Just before serving Garnish with the Parsley

Okra Creole Style

Please Try this side dish from St Lucia Ingredients 16 Okras , sliced 1 Large Onion , Thinly Sliced 1 Green Pepper , seeded and chopped 2 Garlic Cloves , Crushed 1 Tin of Chopped Tomatoes 250g of sweet corn juice of 1/2 lime dash of hot pepper sauce Fresh Coriander to garnish Method 1) Heat some oil and add the onion , Green Pepper and Garlic , cook  until slightly browned on a medium heat 2) Add the Okra and cook for a further 5 minutes 3)Add the Tomatoes , Corn , season with salt and pepper and add the lime juice and reduce the heat to a low heat for 15-20 minutes, until the okra are soft and the sauce is thickened 4) Just before serving  add a dash of Hot pepper sauce and garnish with Coriander

Okra Fried Rice

This is nice Caribbean side dish that goes with most meals Ingredients 1 tbsp of Butter 2 Tbsp of oil 1 garlic clove crushed 1/2 red onion finely chopped 115 grams of okra , trimmed half green and red pepper diced 1/2 tsp of dried thyme 2 fresh green chilies finely chopped 1/2 tsp of five spice powder 1 veg stock cube crumbled 2 Tbsp of soy sauce 1 Tbsp of coriander 225 grams of cooked long grain rice salt and pepper to  taste Method 1) Melt the butter in the frying pan and cook the garlic and onion in pan until soft 2) Slice the okra and add to the pan for 5 minutes 3) add the peppers , thyme , chilies , five spice powder and cook for 3 minutes then crumble in the stock cube 4) Add the Soy Sauce , chopped coriander and rice and heat through , season with salt and pepper

Creole Fish Stew

This is a lovely spicy dish from the Caribbean. Ingredients Enough Cod for 4 people ( or any firm fish) cut into 2.5 cm  or 1-inch pieces 2 Tbsp of Creole Seasoning 2 Tbsps of Malt Vinegar Flour for dusting For the sauce Oil 1 tbsp of butter 1 onion, finely chopped 1 can of chopped tomatoes 2 Garlic cloves crushed 2 Fresh Thyme sprigs 500 ml of fish stock 1/2 tsp of Cinnamon 1 green and red pepper finely chopped 1 hot chilli, chopped Method 1) Toss the pieces of Fish with the seasoning and vinegar in a bowl and leave in a refrigerator for 2 hours 2)When ready to cook add the fish piece to Flour shake off excess and fry for 5 minutes and set aside 3)  To make the sauce add the butter and oil and fry the onion for 5 minutes, then add the tomatoes, garlic, thyme, peppers and simmer for a further 5 minutes. 4) Then add the stock, chilli and cinnamon, then add the fish back and  simmer until the sauce reduces

Chicken Quesadilla

Chicken Quesadilla makes a lovely lunch time snack , please try some day. Ingredients makes 4 8 Plain Tortilla wraps 8 tbsp of Tomato Relish 350grams of skinless chicken breast , shredded 1 bunch of spring onions finely sliced 2 Tbsps of Fresh Coriander chopped 300 grams of mature cheddar cheese , grated 1 tsp of sunflower oil Method 1) Spread 1 Wrap with 2 Tbsp of the Tomato relish then top with a quarter of the shredded chicken followed by a quarter of the spring onions and coriander. 2) Sprinkle a quarter of the Cheese and cover with the second wrap and press down firmly and repeat with the others. 3)Then fry in a frying pan with a little oil until the cheese has melted and the tortilla has gone slightly brown. 4) Cut into Halves and serve.

Creole Chicken

This is a great dish from the the Vibrant Island of St Lucia to  wake up your chicken dishes. Ingredients Serves 4 4 Chicken Breasts 2 Spring Onions 1/2 Red Onion 2 Garlic Cloves, crushed 1 Fresh Red chilli 3 Chives, snipped Few sprigs of Thyme Chopped Few Sprigs of Parsley Chopped allspice berries , Crushes Juice of 1 Lime 2 Tablespoons of  Olive Oil Method 1) Make up the seasoning mixture in a bowl 2)Slash the  Chicken Breasts rub with salt and pepper and rub the seasoning in, Cover and refrigerate for 2-3 hrs 3) Cook in an oven at 200 oC for about 25 minutes 4) Enjoy

Barbados Fish Curry

The following dish is a mild curry from the Sunny Island of Barbados. Ingredients 30 grams of  Butter 1 Large Onion , Finely Chopped 1 Garlic Clove , Crushed 1 Tablespoon of Curry Powder 1 Tablespoon of Flour 400 ml of Coconut Milk 1 Green Chilli finely Chopped 500 grams of  white fish fillets Juice of 1/2 lime Chopped Corriander to Garnish Method 1) Cook the onion and garlic slowly in the garlic 2) Add the curry Powder and Flour and cook slowly for 2 minutes 3) Add the coconut milk and chili and let simmer for 5-10 minutes 4) Whilst the curry sauce is cooking  arrange your fish fillets in an oven proof dish and squeeze the lime juice over them 5) Season the curry sauce and pour over the fish and cook in the over for 15 minutes at 170 oC. 6) Sprinkle with Corriander and Serve with mango chutney and rice.

Peruvian Poor man's Potatoes

This is a delicious  side dish to have with any main meal and the spice really works well with the potatoes. Ingredients 6 Tablespoons of Olive oil Enough Potatoes for  4 people Salt 2 Cloves of Garlic Black Peppercorns 1 Teaspoon of Paprika or Chilli Powder 1 Teaspoon of Cumin 3 Tablespoons of cold water 1 Tablespoon of white wine Vinegar Chopped Fresh Parsley to Garnish Method  1) Peel and slice the potatoes and simmer away for about  6-8 Minutes 2) Then  drain the water and dry out the potatoes for about 30 minutes ( this will make the potatoes more crispy) 3) Heat the Oil in a large frying Pan , when the oil is sizzling place the potatoes into the pan. 4)  Fry until the potatoes are browned 5) Whilst frying you can crush the Garlic and Peppercorns in a Mortar and Pestle , adding the spices and water to make a paste. 6) Add this paste and  the white wine vinegar into the pan, stir well and cook until the potatoes are fully cook...
