Peruvian Poor man's Potatoes
This is a delicious side dish to have with any main meal and the spice really works well with the potatoes.
Ingredients
6 Tablespoons of Olive oil
Enough Potatoes for 4 people
Salt
2 Cloves of Garlic
Black Peppercorns
1 Teaspoon of Paprika or Chilli Powder
1 Teaspoon of Cumin
3 Tablespoons of cold water
1 Tablespoon of white wine Vinegar
Chopped Fresh Parsley to Garnish
Method
1) Peel and slice the potatoes and simmer away for about 6-8 Minutes
2) Then drain the water and dry out the potatoes for about 30 minutes ( this will make the potatoes more crispy)
3) Heat the Oil in a large frying Pan , when the oil is sizzling place the potatoes into the pan.
4) Fry until the potatoes are browned
5) Whilst frying you can crush the Garlic and Peppercorns in a Mortar and Pestle , adding the spices and water to make a paste.
6) Add this paste and the white wine vinegar into the pan, stir well and cook until the potatoes are fully cooked.
7) Before Serving sprinkle Parsley on the top
