Thai Omelette

This is an excellent way to bring life back into the humble omelette and its great idea for Lunch. Enjoy

Method Serves 4

3 Tomatoes Diced
1 Red Onion , Peeled and  coarsely Diced
100g of Courgettes Diced
2 Spring Onions , trimmed and Chopped
1 Fresh red Chilli , deseeded and Chopped
2 Tablespoons finely chopped fresh Coriander leaves
2 Teaspoons of Fish sauce
2 Teaspoons of Soy Sauce
1 Teaspoon of Demerara or palm sugar
6 large Eggs beaten

Method

1 ) Simply fry the veg until cooked
2) add the soy sauce , Fish Sauce and sugar and then set this  veg mixture to one side
3) Make for  4 omelettes and stuff each omelette with a quarter of the veg mixture and serve hot.
