Blueberry Almond Cake
Please try this delightful cake
Ingredients
4 Eggs
220 grams of Caster sugar
1 Teaspoon of Vanilla Extra
150 grams of Self-raising Flour
150 Grams unsalted butter melted
120 grams of Ground Almonds
250 grams of Blueberries
Method
1) Place the eggs , sugar and Vanilla Extract in the bowl of an electric mixer and whisk for 8-10 minutes or until thick , pale and tripled in Volume
2) Sift the Flour over this mixture and fold through
3) Then Fold Through the Butter and Ground Almonds
4) Pour the Mixture into a lined cake tine with parchment paper ( 20cm X 30 cm or as close as you can get it)
5) Top with Blueberries and cook for 50 minutes at 160 degrees
