Apple Clove cake

This cake works wells with Afternoon Tea or a Dessert after dinner.

Ingredients

Butter for the cake tin

Filling

1kg of Cooking Apples
1/4 Tsp of  Ground Cloves
75 grams Light Muscovado Sugar
25 grams of Butter Diced
50 grams of Sultanas

Shortcake

225 grams of Self Raising Flour
100 grams of Golden Caster Sugar
125 grams of unsalted butter chilled and diced
1 Medium egg beaten
Icing sugar for dusting

Method

1) Butter a 20 cm ( 8-inch loose-bottom cake tin) till about 7 cm in height
2) Peel, Quarter , core and coarsely chop the apples.
3)  Combine all the ingredients for the Filling in a pan with a few tablespoons of water , Cover the pan and cook for 20 minutes stirring from time to time, until you have a thick compote mixture.
4) Meanwhile place the Flour,sugar, and butter in a food processor and whizz until crumb like then add the egg and briefly  pulse in order to coat the crumbs.
5) Scatter half of this crumb mixture on the base of the buttered cake tin. Spoon over the hot fruit in an even smooth layer , then scatter the rest of the remaining crumble on the top. Bake for 40-50 minutes at 190 oC and enjoy.
