Spaghetti with Winter Tomato Sauce

This Dish would be made this time of year when the tomatoes are not at their best. Hope you try and Enjoy.

Ingredients

1 Onion
1 Carrot
1 Celery Stick
Olive oil
1 Garlic thinly sliced
Few leaves of  Basil , Tyme and Oregano
2  cans of the best tomatoes
1 Tbsp of Sun dried tomato paste
1 tsp of  Granulate Sugar
Small bottle of Red wine
350 grams of Spaghetti ( 4 people)
Parmsean to serve

Method

1) Chop finely the onion , carrot and celery
2)  Heat the olive oil in a fry pan and fry the Garlic over a low heat for 2 mins
3) Then add the vegetables and cook over a low heat for 7 minutes
4) Add the Tomatoes , tomato paste and sugar and wine. Then add salt and pepper and bring to a boil.
5) let the sauce simmer for 30 minutes
6) Meanwhile cook the pasta and add to the pasta sauce and serve with parmesan cheese
