Tuscan Chicken

Hope you enjoy this main this is the perfect time of year to cook it.

Ingredients

Enough Chicken Thighs for 4 people
1 Onion Chopped
1 Can chopped Tomatoes
300 ml of dry white wine
1 rosemary sprig of Rosemary
1 Tablespoon of  chopped Thyme
15 grams of Flour
15 grams of Butter
2 Tablespoons of Parsley to serve

Method

1) Brown the chicken and set aside
2) Add the onions to the pan and cook gently until soft
3) Add the white wine , Tomatoes , Rosemary , Thyme , Salt and Pepper
4) Bring to a boil then simmer adding the chicken and cook covered for about 30 minutes.
5) Remove the chicken if necessary  blend the flour and butter together ( beurre manie) and add to the sauce. Bring the sauce to the boil stirring until it thickens. Pour the sauce over the chicken and sprinkle over the Parsley.
