Spaghetti Puttanesca
Spaghetti Puttanesca is one of my family's favourite pasta meals. If you like salty flavours then this is the sauce for you. Most of my Tomato Pasta sauces blogs , like my Indian curries will look the same in the pictures but the addition of different ingredients allow the dishes to have a unique flavour.
Ingredients
Olive Oil
1 small onion finely chopped
2 garlic cloves finely chopped
4 anchovies
50 grams of black olives , sliced
1 Tbsp of capers
1 can of chopped Tomatoes
45 ml of water or to make it richer a glass of red wine
1 Tbsp of Parsley or basil
350 grams of spaghetti
Method
1) Heat the Saucepan and cook the onions , garlic , anchovies over a low heat for 5 minutes.
2) Add the Black Olives and Capers and cook for 1 -2 minutes
3) Add the tomatoes , wine or water and half your herbs slowly let simmer away for 30 minutes
4) Cook your pasta
5) Assemble in a bowl and sprinkle the remaining herbs on the pasta.
Additional Information
If you add an extra tin of tomatoes , 120 ml of water and red wine along with a red pepper and aubergine you have a slightly similar pasta sauce to the above but equally as nice called spaghetti alla Sircausana , which is a Sicilian dish , where as Puttanesca is from Campania in southern Italy .
