Chicken Caccitore

Chicken Caccitore is a simple Autumnal dish to prepare. Chicken Caccitore is the Italian version of Hunters Chicken.

Ingredients

Olive Oil
Enough Chicken Thighs for 4 people
50 grams of bacon diced
1 Onion finely Chopped
1 Garlic Clove Crushed
1 Teaspoon of Flour
150 ml of Dry White Wine
300 ml of Chicken Stock
1 can of Chopped Tomatoes
1 Teaspoon of Tomato Puree
125 Grams of Mushrooms
Chopped Parsley to serve

Method

1) Brown the Chicken and take out and set aside
2) Repeat this process with Bacon
3) Add more Oil if need be and fry the onion and garlic until soft then stir
4) Stir in the flour and cook for a few minutes
5) Then add the stock , white wine , Tomato Puree and Tomatoes  to the boil and then allow to simmer , whilst simmering  season to taste.
6) Then transfer the Chicken, Bacon and tomato sauce to a casserole dish to a preheated oven at 190oC for 30 minutes .
7) Then Add the Mushrooms and cook for a further 15 minutes
8) Then Serve with Parsley Sprinkled on the top
