Fish in a Cheese and Wine sauce

This is a very easy dish do and I find the wine and cheese gives the fish  a luxurious Flavour

Ingredients

4 Fish fillets such as sole
75 grams of Butter
25g of grated Parmesan cheese
50 g of Fish stock
3 Tablespoons of dry white wine or Marsala wine
salt and pepper
extra cheese to serve

Method

1) Place some flour in a shallow bowl mix with salt and pepper  place each fish fillet and shake of excess.
2)Heat the butter and add each Fish fillet and cook for 3 minutes each side
3) Sprinkle the Parmesan on the fish and cook for 2 minutes until it melts
4) Add the fish stock and wine and cover the pan for 4 minutes until the fish is cooked and the sauce has reduced.
