Barbadian Rum Pancakes
I hope you enjoy this flavoursome Dessert
Ingredients
150g Plain flour
1 teaspoon Sugar
2 eggs
1 Tablespoon of olive oil
300 ml of milk
oil for frying
Fruits of your choice for the filling
grated chocolate, to decorate
Method
1) Sift the flour into a bowl and make a well in the centre. Stir in the sugar and eggs, olive oil and rum, blend thoroughly into the mixture is smooth.
2) Gradually add the milk a little at a time while beating. The batter should be smooth with the consistency of Single cream. Add more milk if necessary and leave to stand for 1 hour
3) Brush a small omelette pan with a little oil and heat thoroughly then pour in enough batter to cover the base of the pan. Cook until the batter is Golden on either side.
4) Then add the fruit of your choice and roll up and decorate with chocolate ( I used tinned Peaches). Serve Immediately
