Tuscan Bean Soup
This is the lovely soup in this cold weather
Ingredients
2 Tablespoons of Olive oil
4 Shallots, Chopped
2 Garlic cloves Chopped
150g of unsmoked bacon
1 carrot , diced
2 celery sticks , diced
1/2 red pepper diced
1 can of borlotti beans
1 Litre of Chicken stock
1 bay leaf
1 teaspoon of chopped oregano
1 teaspoon of chopped marjoram
Handful of parsley chopped
salt and pepper
Method
1) Heat the oil in the saucepan , add the shallots , garlic , bacon , carrot , celery and red pepper and cook , stirring occasionally , for 5 minutes
2) Add the beans , stock , bay leaf, oregano and marjoram and bring to the boil and simmer for 15 minutes. Skim of any scum that comes from the beans
3) Season well , remove the bay leaf and add the chopped parsley and serve
