Easy Malay Chicken Curry

I hope you enjoy Ingredients for 4 people 1 Onion Chopped 2 Tbsp of Baba's Curry Powder 1 Can of Good quality Thai Coconut milk such as d'aroy 1lb of Chicken 2 Medium sized potaotes cut into cubes ( feel free to add other veg such as mange tout and peas) 1 Cup of Water Method 1) Add Oil to the pan and fry the Onions 2) Add the Curry Powder 3) Add the Chicken and stir well and cook for a minute 4)Add The Coconut Milk and water and bring to a boil and simmer for 30-45 minutes 5) Garnish with Coriander
