Chicken with a Mushroom Sauce
I love mushrooms so this sauce is a welcome addition, you add this sauce to any meat.
Ingredients
4 Chicken Breasts
300 ml of milk
40g of Butter
2 tbsps of oil
300g of Mushrooms chopped
1 clove of garlic chopped
half an onion chopped
A small handful of parsley chopped
juice of 1/2 lemon
300 ml of cider
1 bouquet garni
6 tbsps of double cream
Method
1) Melt 25g of butter in a saucepan and throw in your mushrooms with some salt and cook until they release their juices.
2) Then throw in the Garlic, Onion, Parsley, Lemon juice, and Pepper and simmer gently
3) Meanwhile, in another pan melt the remaining butter and add the oil and fry the chicken breasts for about 5 minutes each side. Then take the chicken breasts out onto a plate and keep warm.
4)De-glaze the pan with cider and the bouquet garni, reduce the mixture a bit then remove the bouquet garni and add the crea.
5) Pour half of the cream onto the meat and add the rest to the mushrooms which in turn can be added to the meat.
