Spaghetti Genovese
This is a pasta sauce that originates in Genoa in Liguria
Ingredients
350 Grams of Dried Spaghetti
50 grams of Parmesan Cheese
200 grams of Onions Sliced
1 tin of chopped Tomatoes
2 large eggs beaten
Salt and Freshly ground Pepper
Method
1) Fry the Onions gently until soft, about 10 minutes
2) Add the chopped tomatoes and cook gently for a further 20 minutes stirring occasionally
3) Cook the pasta
4) When the Pasta is nearly cooked add the eggs to the sauce and stir so the sauce thickens.
5) Add the Pasta to the sauce and mix
6) Scatter the cheese on the top and enjoy
