Chicken and Peanut Curry
This is a lovely Flavoursome Curry for everyone to Enjoy
Ingredients
1 Large red chilli, Deseeded
1/2 Finger piece of fresh Ginger, roughly chopped
1 Fat Garlic Clove
Small Bunch of Coriander, Stalks Roughly Chopped
1 Tbsp of Sunflower Oil
4 Skinless Chicken Breasts cut into Chunks
5 Tbsp of Peanut Butter
150 ml of Chicken Stock
200g Pot of Greek Yoghurt
Method
1) Finely slice a quarter of the Chilli, then put the rest in a food processor, with the ginger, garlic, coriander stalks and one-third of the leaves, whizz to a paste
2)Heat the oil fry the chicken until brown then add the paste, stir in the paste, then add the stock, peanut butter and yoghurt.
3) Let it gently simmer for 10 minutes garnish with the remaining chilli and coriander and serve with rice
