Tuna FishCakes

This is a great idea for a lunch or a light dinner

Ingredients

4 Medium baking Potatoes
1/2 red onion, finely Chopped
Small bunch of flat leaf parsley, finely chopped
2 Tbsps of Capers
zest of 1 Lemon
2 x 200 grams of tin tuna

Method

1) Microwave the potatoes for 15 minutes turning one then leave to cool, then scoop out the cooked flesh into a bowl and mash
2) Add the other ingredients season and mix well.
3) Shape the mixture into 8 small patties
4) Put on an oiled baking sheet and brush with a little oil
5) cook over a medium grill for 4 minutes each side until golden.
6) Serve with a salad
