Chicken in a Leek cream sauce
Please try this dish I just love leaks but alas do not eat them enough .
Ingredients serves 4
4 Chicken breasts
Butter for frying
2 Leaks chopped
3-4 shallots chopped
1/2 Bottle of White wine
300-400 ml of Veal Stock
8 Tablespoons of Cream
Method
1) Season the Chicken breasts with Salt and Pepper and fry in butter until they are cooked and set aside and keep warm
2) Add the Leaks and Shallots into the same pan and the wine and cook until the wine has reduced and the leeks and shallots are moist
3) Then add the Veal stock and cook until it has a syrupy consistency.
4) Then add the cream
5) Meanwhile, cut the chicken into slices and add this sauce on the top , you can strain but I like to eat the leeks too.
