Chicken Rogan Josh
Rogan Josh is one of my Favourite curries and I hope you enjoy .
Ingredients
8 Chicken Thigh Fillets
300 ml of water or chicken stock
2 Onions Finely Chopped
2 teaspoons of Ginger Puree
2 Teaspoons of Garlic Puree
1 Teaspoon of Turmeric Powder
4 Teaspoons of Mild Curry powder
1/2 Teaspoon of Chilli Powder
1 Teaspoon of Garam Masala Powder
1 Teaspoon of Fennel Seeds
1 Teaspoon of Cumin Seeds
2 Onions Pureed , I use a ken wood Chopper to puree the onions
100 ml of Natural Yoghurt
5 Tomatoes deseeded and skinned and cut into quarters
2 Tbsps of Tomato Puree
1 can of Chopped Tomatoes
Corriander to Garnish
Method
1) Fry the seeds in the saucepan with the oil on a high heat until they start to crackle
2) Then turn down to a lower heat and fry the chopped onions slowly until they start to brown
3) Make a paste from the Ginger and Garlic puree , Turmeric , Mild Curry Powder and Chilli powder by adding a little water.
4) Add to the saucepan and fry for a few minutes
5) Add the Chicken
6) Add the Chopped tomatoes
7) Then in a jug mix the stock or water with the yoghurt , tin of tomatoes and tomato puree and pour into the saucepan and turn up the heat until it simmers and cook until the chicken is done.
8) Just before you serve add the Garam masala and Garnish with the Corriander.
